This is the Fixed Parameters button: 
In the Syntorial Challenges, the knobs and faders jump between values for the sake of the learning process. When using the standalone synth or Primer, you can toggle this feature on/off with the Fixed Parameters button. Toggling it off will allow the knobs and faders to move continuously and smoothly between all values, as is customary with most synths.
